Gluten Sensitivity and Diabetes Dr. Phil Shambaugh, M.S., D.C. Nutrikenetics, Washington, DC Dr. Shambaugh will explain how gluten protein can produce inflammation that can contribute to diabetes. While only 5% of gluten sensitive people actually have celiac disease, the remaining 95% can have other chronic illnesses related to gluten sensitivity.
