Frozen Chocolate Banana Pops

Prepare this easy recipe for a delicious summer treat that is loaded with nutrition. The dark chocolate may also help to improve insulin sensitivity and lower blood pressure! Look for bars that contain at least 70% cocoa to avoid excess fat and sugar.

Yields 6 Servings

  • 2 ripe bananas
  • 6 Popsicle sticks or wooden skewers
  • 8 oz chopped dark chocolate or chocolate chips
  • 1 tb vegetable oil
  • ½ cup chopped peanuts, sprinkles, or shredded coconut (optional)

Peel and cut the bananas crosswise into thirds, then insert a Popsicle stick into each piece. Place them on a baking sheet lined with foil or parchment paper, and freeze for 1 hour.

Meanwhile, melt the chocolate with the oil in a microwave-safe bowl, checking it every 30 seconds. Stir until smooth.

Dip each banana piece in the chocolate, then quickly sprinkle with your desired topping.

Place the bananas back on the lined tray and freeze until the chocolate sets, about 30 minutes. Enjoy immediately or freeze in an airtight container for up to a week.
