Simple Sautéed Cabbage

Cabbage is a great source of vitamins K and C, which are essential for bone and immune health. Prepare this recipe for a delicious and nutrient-packed side dish.

Yields 6-8 Servings

  • 2 tb olive oil
  • 1 clove garlic, minced
  • 1 medium onion, sliced
  • 1 head green cabbage, cored and shredded
  • 1 tsp salt
  • ½ tsp pepper
  • water or vegetable broth
  • 2 teaspoons chopped fresh parsley (optional)

Heat the olive oil in a large skillet over medium heat. Add the garlic and onion, and cook until softened, about 3 minutes. Add the shredded cabbage, salt and pepper, and stir to combine. Reduce the heat to low, and allow the cabbage to cook for 10-15 minutes, or until tender. Stir occasionally, adding a few tablespoons of water or broth if the mixture becomes too dry. Stir in parsley before serving, if desired.
