Strawberry Meringue Cookies

These meringue cookies are light, airy, and low in calories- perfect for a Valentine's Day treat!       

Yields 2 dozen cookies


  • 1/4 cup fresh strawberries
  • 3 egg whites
  • 1/4 tsp cream of tartar
  • 3/4 cup superfine sugar
  • Red food coloring, optional


Preheat oven to 300°F. 

Lightly mash the strawberries until smooth and set aside.

Using an electric mixer, beat the egg whites on medium speed until foamy. Add the cream of tartar and continue to beat mixture until soft peaks form. Gradually add in the sugar, and continue to beat until mixture holds stiff peaks and looks glossy. Carefully fold in the strawberries. If desired, add a few drops of red food coloring to the mixture for a brighter pink color.

Using two spoons, drop small mounds of the meringue onto a cookie sheet lined with parchment paper. Bake until the cookies are pale in color and crisp, about 25 to 30 minutes.
