Grilled Summer Squash

Summer squash is loaded with Vitamins A and C, magnesium, fiber, folate and more. Prepare this recipe for a delicious and simple summer side dish.   

Yields 6 Servings


  • 3 lbs assorted summer squash
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 tb olive oil
  • fresh lemon juice from 1 lemon


  • Trim the ends of the squash and cut into ½ inch thick slices. Toss with the salt, pepper and olive oil in a large bowl. Grill the squash on an outdoor grill (or inside on a grill pan) for 4-5 minutes on each side, or until they reach the desired tenderness. Remove from heat and squeeze some fresh lemon juice on top before serving.
