Baked Tilapia with Pineapple Salsa

Fresh and brightly flavored pineapple salsa is the perfect accompaniment to tilapia in this recipe. Prepare this dish for an easy protein-packed main course that is also low in fat. 

Yields 4 Servings


  • 2 tb canola oil
  • ½ tsp ground cumin
  • 4 tb fresh lime juice, divided
  • ¼ teaspoon salt
  • 4 tilapia fillets, rinsed and patted dry (4 oz each)
  • 1 cup fresh pineapple, cubed
  • ¼ cup diced Roma tomatoes
  • ¼ cup chopped red onion
  • ½  jalapeno pepper, seeded and chopped (optional)
  • 1 tb minced fresh cilantro

Preheat oven to 400°F. 

In a shallow baking dish, combine the oil, cumin, 2 tablespoons of lime juice and the salt.  Place the tilapia in the baking dish, turning them over a few times to coat in the marinade. Bake for 10-12 minutes, until the filets are opaque and flakey.

Meanwhile, in a medium bowl, combine the pineapple, tomatoes, onion, jalapeno (if desired), cilantro and remaining lime juice.  Toss to combine, and refrigerate until the tilapia is ready. To serve, place the fillets on a platter and top with the salsa.
