Marinated Tomato Mozzarella Salad

Tomatoes are packed with powerful antioxidants and cancer-fighting carotenoids, and studies have shown that these nutrients are better absorbed when eaten with healthy fats like olive oil. Enjoy this easy salad recipe for a delicious way to get the most out of this amazing fruit!

Yields 4-6 Servings


  • 1 ½ cups part-skim mozzarella cheese, cubed
  • ¼ c fresh basil, chopped
  • ¼ c olive oil
  • 1 pint cherry or grape tomatoes, halved
  • 3 tb balsamic vinegar
  • salt and pepper, to taste


  • Combine the cheese, basil and olive oil in a bowl and let marinate for 30 minutes in the refrigerator. Then add the tomatoes, vinegar, salt and pepper and toss to combine. Serve immediately.
