Simple Stir Fried Asparagus with Quinoa

Quinoa is a grain that is a good source of protein, calcium, and iron. It can be found in most health food stores.

Healthy Recipe with Asparagus and Quinoa

1) Prepare the quinoa

  • 1 cup quinoa
  • 2 cups water

Rinse quinoa in cool water.  Bring 2 cups water to a boil.  Add quinoa and simmer for 15 min.

2) Prepare the asparagus

  • 1 pound fresh asparagus - wash; slice diagonally into 2 inch pieces
  • 2 teaspoons olive oil
  • salt and pepper to taste

Heat oil in a medium frying pan.  Add asparagus and salt and pepper.  Stir constantly until asparagus is tender but still somewhat crisp (approximately 5 minutes)

3) Combine quinoa and asparagus or serve separately if desired. Enjoy!

Makes 4 servings.

  • 5.5 g fiber
  • 24 g protein
  • 4 g fat
