Black and Red Bean Salad with Lime-Cumin Dressing

The dressing makes this high fiber salad special. So quick and easy, especially if you keep a supply of the salad dressing on hand. Then you can combine the dressing with any combination of beans you like!

Salad:

  • 1 cup thinly sliced celery (2 stalks)
  • 3/4 cup vertically sliced red onion
  • 1 (15 oz.) can of black beans
  • 1 (15 oz.) can of dark red kidney beans

    Dressing:

  • 1/2 cup fresh lime juice
  • 2 Tbsp. sugar
  • 2 Tbsp. olive oil
  • 1/2 tsp. ground cumin

Instructions:

Rinse and drain the canned beans. Combine with the celery and onion in a large bowl and toss well. In a separate bowl, combine ingredients for the dressing and stir with a whisk until blended. Pour half of the dressing over the bean mixture, tossing to coat. Adjust seasonings as desired. Refrigerate the remainder of the dressing in a jar for your next bean salad!
