Lentil Barley Stew

soup mugsA bowl of this stew satisfies hunger and helps stabilize blood sugar levels.  It is also high in protein and water soluble fiber. 

  • 8 cups water
  • 1 cup dry lentils
  • 1/2 cup pearl barley
  • 2 carrots, scrubbed and cut into large chunks
  • 2 stalks celery, chopped
  • 1 large yellow onion, chopped
  • 1 clove garlic, pressed or chopped fine
  • 2 bay leaves
  • 2 1/2 tsp. ground cumin
  • 1 1/2 tsp. ground thyme
  • 1 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. black pepper

Combine all ingredients in a large heavy stew pot.

Cover and simmer for about 1 1/2 hours over low heat, stirring occasionally.

Adjust seasonings to suit your taste.

Makes 4 servings
Per serving:

  • 270 calories
  • 50 g carbohydrate
  • 20 g fiber
  • 0 g fat
  • 16 g protein
