Lentil Barley Stew
A bowl of this stew satisfies hunger and helps stabilize blood sugar levels. It is also high in protein and water soluble fiber.
- 8 cups water
- 1 cup dry lentils
- 1/2 cup pearl barley
- 2 carrots, scrubbed and cut into large chunks
- 2 stalks celery, chopped
- 1 large yellow onion, chopped
- 1 clove garlic, pressed or chopped fine
- 2 bay leaves
- 2 1/2 tsp. ground cumin
- 1 1/2 tsp. ground thyme
- 1 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 tsp. black pepper
Combine all ingredients in a large heavy stew pot.
Cover and simmer for about 1 1/2 hours over low heat, stirring occasionally.
Adjust seasonings to suit your taste.
