Baked Sweet Potato Fries

This simple recipe stars sweet potatoes which are
high in fiber, beta carotene, and potassium.

Makes 4 Servings

Ingredients: 

  • 2 pounds sweet potatoes
    (approximately 2 large)

  • Salt & pepper to taste

  • 1 Tablespoon olive

Directions:

Preheat oven to 450 degrees.

Scrub and rinse sweet potatoes, pat dry. Leaving skin on, cut the sweet potatoes into thick strips (resembling french fries).

In a bowl, gently toss the sweet potatoes with oil to coat. Place on a baking sheet in a single layer. Sprinkle with salt and pepper if desired.

Bake 10 minutes, gently turn the sweet potatoes over to brown the other side and bake 10 minutes more, or until lightly browned.
