Q:

I was told there is a certain type of bread that is easily digested, ideal for someone with diabetes. Can you help me with info?

A:

I don't have a direct answer for this. The more refined a bread is, the more your blood sugar is likely to rise. What might be referred to here is non-wheat/non-gluten breads; wheat and gluten often are involved in immune allergy responses. There are rice breads, potato, spelt and pure rye breads that can address these problems. As far as hoping for a "wonder bread" that would not affect your blood sugar much, I don't believe that exists beyond a reasonable carb intake level.
