What is quinoa?
A:
Quinoa is a grain from the Andes Mountains that once nourished the ancient Incans. It is now being rediscovered and grown in the US. Quinoa is a good source of protein, calcium, and iron. It is also a good alternative to wheat, rice, or potatoes. The raw grain may need to be washed to thoroughly remove the saponin, a strengthening compound that discourages predators from eating it while growing. Quinoa pasta can be found in most health food stores.
